A Fantastic Recipe for Mandi.

Traditional mandi Yemeni dish made with a combination of rice and meat. Fragrant and delicious dish is usually served on special occasions.

Ingredients.

Meat (goat or chicken) 1 kg (large pieces)
Basmati rice 500 grams
Water 4 cups
Onion 1 (finely chopped)
Tomatoes 2 (finely chopped)
Garlic cloves 5 (finely chopped)

Whole Spices.

Cinnamon stick – 2-inch piece
Cloves – 5-6
Black cardamom – 2
Green cardamom – 4

Ground Spices.
Red chili powder – 1 tsp
Turmeric – ½ tsp
Cumin – 1 tsp
Salt – to taste
½ tsp saffron(soaked in water)

Other Ingredients.
Ghee – ½ cup

Instructions.

  1. Preparing the Meat:**
  2. Heat ghee in a large pot. onion chopped add and sauté until golden brown.
  3. Garlic add and cook until fragrant.
  4. Add tomatoes and all whole spices (cinnamon, cloves, cardamom). Cook for 2-3 minutes.
  5. Red chili powder, turmeric, cumin mix and salt. Continue cooking for 5-7 minutes.
  6. Water add cover the pot, and let the meat simmer over medium heat until tender.
  7. Preparing the Rice.
  8. Soak Rice rinse and it in water for 30 minutes.
  9. In a separate pot, boil water and add salt along with a pinch of cumin.
  10. Add the soaked rice and cook until it is 70-80% done. Drain the water.
  11. Assembling the Mandi.
  12. Layer the cooked meat at the bottom of a large pot.
  13. Boiled rice Spread over the meat and sprinkle the saffron water on top.
  14. Cover the pot tightly and cook on low heat for 20-25 minutes (dum method).
  15. Serving.

Rice meat Transfer to the a large serving dish. Yogurt serve with sauce or salad on the side.
