Traditional mandi Yemeni dish made with a combination of rice and meat. Fragrant and delicious dish is usually served on special occasions.
Ingredients.
Meat (goat or chicken) 1 kg (large pieces)
Basmati rice 500 grams
Water 4 cups
Onion 1 (finely chopped)
Tomatoes 2 (finely chopped)
Garlic cloves 5 (finely chopped)
Whole Spices.
Cinnamon stick – 2-inch piece
Cloves – 5-6
Black cardamom – 2
Green cardamom – 4
Ground Spices.
Red chili powder – 1 tsp
Turmeric – ½ tsp
Cumin – 1 tsp
Salt – to taste
½ tsp saffron(soaked in water)
Other Ingredients.
Ghee – ½ cup
Instructions.
- Preparing the Meat:**
- Heat ghee in a large pot. onion chopped add and sauté until golden brown.
- Garlic add and cook until fragrant.
- Add tomatoes and all whole spices (cinnamon, cloves, cardamom). Cook for 2-3 minutes.
- Red chili powder, turmeric, cumin mix and salt. Continue cooking for 5-7 minutes.
- Water add cover the pot, and let the meat simmer over medium heat until tender.
- Preparing the Rice.
- Soak Rice rinse and it in water for 30 minutes.
- In a separate pot, boil water and add salt along with a pinch of cumin.
- Add the soaked rice and cook until it is 70-80% done. Drain the water.
- Assembling the Mandi.
- Layer the cooked meat at the bottom of a large pot.
- Boiled rice Spread over the meat and sprinkle the saffron water on top.
- Cover the pot tightly and cook on low heat for 20-25 minutes (dum method).
- Serving.
Rice meat Transfer to the a large serving dish. Yogurt serve with sauce or salad on the side.
