Ingredients.
1 cup semolina (sooji)
1/4 cup all-purpose flour (maida)
Salt to taste
Water for kneading
1 cup boiled and mashed potatoes
1/2 cup boiled black chickpeas
1/4 cup finely chopped onions
1/4 cup finely chopped tomatoes
2 tablespoons finely chopped coriander leaves
1 teaspoon chaat masala
1/2 teaspoon red chili powder
1/2 teaspoon roasted cumin powder
Tamarind chutney for drizzling
Mint chutney for drizzling
Oil for frying
Instructions.
Mix semolina, all-purpose flour, and salt in a bowl. Gradually add water to form a soft dough. Let Cover and it rest for 15 minutes.
In a separate bowl, mix mashed potatoes, black chickpeas, onions, tomatoes, coriander leaves, chaat masala, red chili powder, and roasted cumin powder to create the stuffing.
Divide the dough into small balls and roll them into small discs. Place a spoonful of the stuffing in the center and seal the edges to form kachoris.
Heat oil in a pan and deep fry the kachoris until golden brown.
Drain excess oil and serve the kachoris hot.
Drizzle tamarind chutney and mint chutney on top for added flavor.
