Ingredients.

Potatoes (2-3 large potatoes)
Cooking oil (vegetable oil or any oil of your choice)
Salt, to taste
Black pepper, to taste
Paprika or chili powder (optional, for added flavor and spice)
Fresh herbs (parsley, rosemary, or thyme – optional for garnish)
Instructions

Preparation.

Wash and peel the potatoes. Cut them into thin, even strips to make fries. Rinse them in cold water to remove excess starch and pat them dry with a kitchen towel.

Preheat the Matka.

Place the clay pot (matka) on the stove or in the oven and preheat it. Make sure the matka is completely dry and clean before using it.

Add Oil.

Once the matka is hot, add a generous amount of cooking oil. The amount of oil will depend on the size of your matka, but you want enough to deep fry the potatoes. Heat the oil until it’s hot, but not smoking.

Frying the Fries.

Add the potato strips to the hot oil. Fry the potatoes until they are golden brown and crispy. You may need to do this in batches if your matka is small. Use a slotted spoon to remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil.

Seasoning.

While the fries are still hot, season them with salt, black pepper, and paprika or chili powder if you want some extra flavor and spice.

Garnish.

If you wish, garnish the matka fries with fresh herbs like parsley, rosemary, or thyme for added freshness and aroma.
