Dal (Lentil Soup)
Ingredients.
1 cup toor dal (pigeon peas)
Cup chana dal (split 1/4 chickpeas)
Cup moong dal (split green gram) 1/4
1/4 cup urad dal (split black gram)
1 onion, finely chopped
2 tomatoes, finely chopped
2 green chilies, slit
1 tsp ginger-garlic paste
1 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
1 tsp cumin seeds
2 tbsp ghee
Salt to taste
Coriander leaves, chopped.
Instructions.
Wash all the dals and cook them together in a pressure cooker with 4 cups of water until soft.
Ghee Heat in a pan, add cumin seeds and let them splutter.
Onion Add and sauté until golden brown. Ginger-garlic paste add and green chilies, cook for another minute.
Add tomatoes and cook until they are soft and the oil starts to separate.
Turmeric powder add red chili powder, garam masala, and salt. Mix well.
Add the cooked dal to the pan, mix well, and simmer for 10 minutes.
Coriander Garnish with leaves.
Baati (Wheat Flour Balls)
Ingredients:
2 cups whole wheat flour
1/2 cup semolina (sooji)
1/2 cup ghee
1/2 cup milk
1 tsp baking powder
Salt to taste.
Instructions.
In a large bowl, mix wheat flour, semolina, salt, and baking powder.
Add melted ghee and mix until the mixture is crumbly.
Gradually add milk to the mixture and knead into a stiff dough.
Divide the dough into small balls and flatten them slightly.
Preheat the oven to 180°C (350°F) and bake the baatis for 30-40 minutes or until golden brown.
After baking, dip the hot baatis in ghee and serve.
Churma (Sweetened Crushed Baati)
Ingredients.
4 baked baatis
1/2 cup powdered sugar
1/4 cup ghee
1/2 tsp cardamom powder
Handful of chopped nuts (almonds, cashews, pistachios)
Instructions.
Crush the baked baatis into a coarse powder using your hands or a food processor.
Heat ghee in a pan, add the crushed baati, and roast until golden brown.
Add powdered sugar, cardamom powder, and chopped nuts. Mix well.
Serve warm or at room temperature.
