Ingredients.
4 eggs
1 onion, finely chopped
2 green chilies, finely chopped
1 tomato, finely chopped
1/4 cup chopped coriander leaves
Salt to taste
1/2 teaspoon red chili powder
1/2 teaspoon turmeric powder
2 tablespoons oil
Instructions.
In a bowl, beat the eggs well. Add chopped onions, green chilies, tomatoes, coriander leaves, salt, red chili powder, and turmeric powder. Mix everything together.
Heat oil in a handi (deep cooking pot) or a frying pan over medium heat.
Pour the egg mixture into the hot oil and spread it evenly in the handi or pan.
Cover and cook on low heat for about 5-7 minutes or until the bottom is golden brown and the top is set.
Once the bottom is cooked, carefully flip the omelette using a spatula and cook the other side for another 3-4 minutes or until golden brown.
Once both sides are cooked and the omelette is firm, remove from heat.
Serve hot with roti, bread, or rice.
