Ingredients.
1 cup dry lentils (green or brown), rinsed
1 large sweet potato, peeled and diced
1 onion, finely chopped
2 cloves garlic, minced
1 can (14 oz) diced tomatoes
4 cups vegetable broth
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to taste)
Salt and pepper to taste
2 tablespoons olive oil
Fresh cilantro for garnish.
Instructions.
Large pot in heat olive oil over medium heat. Add onions and garlic, sauté until softened.
Add cumin, smoked paprika, and cayenne pepper. Stir for a minute to release flavors.
Add sweet potato lentils diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer until lentils and sweet potatoes are tender (about 25-30 minutes).
Season with salt and pepper to taste.Hot garnished with fresh cilantro Serve
