Ingredients.

1 whole chicken (about 2-3 pounds)
2 tablespoons red chili powder
2 tablespoons paprika
2 tablespoons cumin powder
2 tablespoons Coriander powder
2 tablespoons ginger-garlic paste
1/2 cup plain yogurt
1/4 cup cooking oil
Salt to taste
Lemon wedges for garnish

For the stuffing

1 cup basmati rice
1/2 cup whole wheat flour (atta)
2 tablespoons ghee (clarified butter)
2 tablespoons cumin seeds
2-3 green chilies, chopped
Salt to taste

Instructions

Clean and wash the whole chicken thoroughly. Make deep incisions or slits all over the chicken to allow the marinade to penetrate.

Bowl In a mix the red chili powder, paprika, cumin powder, coriander powder, ginger-garlic paste, yogurt, cooking oil, and salt.

This mixture will be used to marinate the chicken. Rub this mixture all over the chicken, making sure to get it into the slits you made. Marinate the chicken for at least 4-6 hours or overnight in the refrigerator for best results.

Meanwhile, prepare the stuffing In a pan, heat the ghee, add cumin seeds, and let them sizzle. Add the green chilies and sauté for a minute. Then, add the whole wheat flour and basmati rice. Roast them together until they turn golden and release a nutty aroma. With Season salt and set aside.

Preheat your grill or barbecue to medium-high heat.

Stuff the marinated chicken with the prepared stuffing. Secure the opening with skewers or truss the chicken with twine.

Place the stuffed chicken on the grill and cook it slowly, turning it frequently, for about 1 to 1.5 hours, or until it’s cooked through and has a golden-brown, crispy skin.
